Simple Pad Thai

PAD THAI (Susie shortcut version – not for professional cooks)

Make this right before serving. It takes about 20 minutes to make

Serves about 6 peeps

I’m not a professional so you wing it like I do

I've attached a picture of the items I use


NOODLES:

Buy the soft thai noodles – 3 packages (they come in packs of 2 FYI – so use 1 and ½ packages)

(if you can’t find – then buy the uncooked version and soak in warm water for 20 min)


SAUCE: Heat on stove top and set aside

2 Jars of Pad Thai Sauce

1 cup peanut sauce

I add ½ cup spicy chili sauce (if you don’t like heat – omit)


IN A LARGE SKILLET or WOK type thing:

Heat ¼ cup + of vegetable oil (olive oil not so great)

Add in 1 package cubed extra firm tofu until golden brown

Add 1 chopped shallot

Add 3 eggs and scramble everything together ‘til eggs are done

Add 3 packs of soft noodles

Add sauce

Add ¼ cup chopped green onion

Toss well


SERVE IN BOWL AND TOP WITH:

Fresh Bean sprouts – if you can’t find fresh – skip (no canned)

Crushed peanuts (I just put peanuts in my bullet blender to chop )

Lime juice – lots

Chopped fresh cilantro

Ground pepper


You can also top with chopped cucumbers, avocado, red peppers
